They contain lots of fiber, are good for your stomach, and provide you with lots of energy. The plus point is that you can use them to bake delicious things like cakes, cookies, breads, and even muffins!

So let’s start with some simple and helpful tips!

What Is Millet?

Millets are old grains such as ragi (finger millet), jowar (sorghum), bajra (pearl millet), and foxtail millet. These are gluten-free and ideal for individuals who wish to consume healthy food or prefer to keep away from wheat.

1. Blend Millets with Other Flours

Millet flours are slightly crumbly and dry by themselves. Therefore, it is best to blend millet flour with other flours such as whole wheat flour, almond flour, or oats flour. This assists in creating soft and moist bakes.

Example: Take 50% millet flour and 50% wheat flour for muffins or cakes.

2. Include a Binding Agent

Since millets don’t have gluten, your dough or batter might fall apart. To fix this, add a binding agent like:

  • Flaxseed powder mixed with water (1 tbsp flaxseed + 3 tbsp water)
  • Chia seeds soaked in water
  • Curd or yogurt
  • Bananas or applesauce (great for sweet bakes!)

3. Keep It Moist

Millets can absorb more water, so your bakes may turn out dry if you’re not careful. Always:

  • Use sufficient liquid in your recipe (milk, curd, or water)
  • Add fruits or vegetables like mashed banana, grated carrot, or zucchini
  • Add a little oil or ghee to retain softness

4. Avoid Overbaking

Millet bakes get dehydrated quickly if baked for too long. So always:-

  • Bake at the right temperature
  • Check if done using a skewer (if clean, it’s ready)

5. Test Small Batches First
